White Beans with Parsnips and Apple

White beans with parsnips and apple from Spoonsparrow deliver great flavor and plenty of plant protein.

Ingredients

  • 250 g dried white giant beans
  • 400 g parsnips
  • 2 shallots
  • 2 tbsp olive oil
  • 30 g tomato paste (2 tbsp)
  • 200 ml vegetable broth
  • Salt
  • Pepper
  • 1 tsp ground coriander
  • 0.5 tbsp paprika powder
  • 5 g marjoram (4 stems)','5 g parsley (4 stems)','2 apples','15 g butter (1 tbsp)

Instructions

    Soak beans overnight in water. Drain the next day and simmer in 1.5 L water over low heat for 1½–2 hours until tender. Then rinse in a sieve and drain.

    Fifteen minutes before cooking the beans, peel and cube parsnips about 1.5 cm. Peel and chop shallots.
