White Beans with Parsnips and Apple

Ingredients
- 250 g dried white giant beans
- 400 g parsnips
- 2 shallots
- 2 tbsp olive oil
- 30 g tomato paste (2 tbsp)
- 200 ml vegetable broth
- Salt
- Pepper
- 1 tsp ground coriander
- 0.5 tbsp paprika powder
- 5 g marjoram (4 stems)','5 g parsley (4 stems)','2 apples','15 g butter (1 tbsp)
Instructions

Soak beans overnight in water. Drain the next day and simmer in 1.5 L water over low heat for 1½–2 hours until tender. Then rinse in a sieve and drain.

Fifteen minutes before cooking the beans, peel and cube parsnips about 1.5 cm. Peel and chop shallots.
