White bean stew with Mettenden from Spoonsparrow: Hearty stew that warms especially well on cold days!

Ingredients

  • 2 stalks leeks
  • 1 Tbsp clarified butter
  • 2 tsp salt
  • Pepper (freshly ground)
  • nutmeg
  • 1.2 L meat broth (instant)
  • 1 large can white beans (820 g)
  • 2 small smoked pork sausages
  • 3 tbsp dark sauce thickener
  • 50 g whipping cream
  • 1 tbsp vinegar

Instructions

    Clean and wash the leeks, cut the white and light green parts into rings. Heat clarified butter in a pot and sauté the leek rings.

    Season with salt, pepper and a pinch of nutmeg. Slice the smoked pork sausages into rounds.

    Add the broth, beans (with liquid) and sausage slices to the pot; simmer for about 5 minutes.

    Stir the sauce thickener and whipping cream into the soup, bring to a brief boil, then season with salt, pepper and vinegar.

    Serve the white bean stew with Mettenden hot.
