White Bean, Potato and Tomato Salad

Ingredients

  • 200 g white beans
  • 400 g small new potatoes
  • 6 tomatoes
  • 2 Spring Onions
  • 1 bunch parsley (roughly chopped)
  • 1 chili pepper
  • 1 Garlic clove
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • Sea salt
  • pepper (from grinder)

Instructions

    Soak beans overnight. Drain, place in a pot, cover with water and cook covered for about 50-60 minutes. Drain and let cool.

    Wash potatoes thoroughly and steam for about 20 minutes until cooked. Let cool and cut into wedges.

    Heat tomatoes briefly, shock in cold water, peel, quarter, remove seeds and slice into strips.

    Wash spring onions, trim and cut slightly diagonally into rings.

    Wash chili pepper, trim and finely chop.

    Peel garlic and finely chop as well. Combine all ingredients with oil and lemon juice, season with salt and pepper. Cover salad for about 30 minutes to allow flavors to meld, taste again and serve.
