Ingredients

  • 1 bundle asparagus
  • 1 tbsp butter
  • Salt
  • 3 tomatoes
  • 1 Shallot
  • 60 g shrimp (pre‑shucked and cleaned)
  • 1 tbsp Olive Oil
  • Pepper (freshly ground)
  • 1 tbsp chopped basil
  • basil for garnish

Instructions

    Wash, peel, and trim the asparagus. Cook in salted water for about 18–25 minutes until tender. While the asparagus cooks, blanch the tomatoes briefly in hot water, then peel, quarter, seed, and slice into strips. Dice the shallot finely. Sauté the shallot in hot oil for a short time, add the tomatoes and shrimp, and steam together for about 3–4 minutes. Season with salt and pepper, then stir in chopped basil.

    Remove the asparagus from the water, toss briefly in hot butter, season lightly with salt, plate on dishes, top with the shrimp mixture, and garnish with fresh basil.
