Christmas‑Marinated Herring with Red Onions

- 8 salted herrings (deboned)
- 2 untreated lemons
- 1 red chili pepper
- 300 ml white wine vinegar (or fruit vinegar)
- 1 tbsp sugar
- 1 tbsp salt
- pepper (ground)
- 3 red onions

Soak the salted herrings for at least 12 hours, then rinse thoroughly and remove any remaining scales. Cut off heads, fillet the fish, removing the central spine. Rinse the fillets again and drain. Split each fillet lengthwise and roll.

Rinse lemons in hot water, dry, and slice thinly. Wash, deseed, and ring‑slice the chili pepper. Boil vinegar with 200 ml water, lemon slices, sugar, salt, and pepper; simmer covered for about 20 minutes.

Peel onions and cut into 3 mm thick slices. Layer herring rolls with onion slices in jars. Strain the brine through a sieve, let it cool to lukewarm, pour over the rolls, seal jars, and refrigerate for 2 days.
