Cod Fillet with Asparagus in Puff Pastry

Ingredients
- 400 g green asparagus
- 400 g white asparagus
- Salt
- 4 pieces cod fillet (about 160 g each)
- 1 Tbsp mixed peppercorns
- 2 Tbsp freshly chopped herbs (e.g., chives and parsley)
- 4 sheets puff pastry
- juice of 1 untreated lemon
- 2 tbsp butter

Preheat the oven to 200°C fan. Peel the lower third of the green asparagus and the entire white asparagus. Simmer the white asparagus in salted water for 10 minutes, add the green asparagus and cook together for about 5 more minutes until just tender. Remove from water and let cool slightly. Pat the fish dry. Crush the peppercorns coarsely and mix with the herbs.

Lay out a sheet of puff pastry, place the asparagus sticks in the center, set the fish on top, drizzle with lemon juice, season with salt, and sprinkle the herb‑pepper mixture. Distribute butter flakes over the fish, fold the pastry over it, tuck in the edges, and seal. Bake in the oven for 15–20 minutes until golden. Serve open on a plate.
