Wheat Tortilla with Grilled Vegetables and Goat Cheese

Ingredients

  • 2 orange bell peppers
  • 1 large zucchini
  • 1 large eggplant
  • Salt
  • 4 stalks cocktail tomatoes
  • Pepper
  • 2 tbsp olive oil
  • 200 g goat cheese roll
  • 1 tsp chopped dried rosemary
  • 1 tbsp extra olive oil
  • 1 tsp lemon juice
  • 12 small tortilla sheets
  • 100 g green marinated olives (pitted)

Instructions

    Wash, trim, halve, seed and slice the bell peppers into strips. Wash the zucchini, trim ends and slice into rounds. Wash the eggplant, trim ends, slice into rounds and lightly salt. Wash the tomato stalks, pat dry but leave stems attached. Toss all vegetables with olive oil in a bowl and grill for about 7 minutes. Meanwhile, slice the goat cheese roll and marinate with rosemary, olive oil and lemon juice. Warm tortilla sheets on the grill or microwave briefly, then divide into four bowls.

    Remove grilled vegetables from the grill, mix with olives and place onto tortillas in bowls. Add goat cheese and serve immediately.
