Okra with Tomato Sauce

Ingredients

  • 300 g okra
  • 2 tbsp oil
  • 1 clove garlic (pressed)
  • 1 small shallot (finely chopped)
  • 4 tomatoes (deveined, seeded, roughly diced)
  • 1 tsp sugar
  • 100 ml White wine
  • Lemon juice
  • 1 tsp Cornstarch
  • butter

Instructions

    Simmer okra in hot oil for about 5 minutes; add garlic at the end and simmer briefly. Remove pan from heat and keep warm.

    For the sauce, sauté shallot in butter, lightly caramelize sugar, deglaze with lemon juice and wine, reduce to half, then thicken with cornstarch. Add tomatoes, season, and simmer for 3-4 minutes.
