Wheat Chickpea Porridge with Chicken

- 600 g Chicken breast fillet
- 1 bunch soup vegetables
- Salt
- 250 g chickpeas (cooked, canned)
- 30 g Butter
- 450 g coarsely ground bulgur
- pepper (ground)
- dried juniper berries (for garnish)

Wash the chicken breasts, pat dry and place them with the soup vegetables and a pinch of salt in a pot. Add water to cover everything and bring to a boil. Cook at medium heat for 35-40 minutes until done. Remove the cooked chicken breasts using a slotted spoon and strain the broth. Rinse the chickpeas in a sieve, cool under running water, and drain well.

Heat butter in a pot, add bulgur, and pour in 500 ml poultry stock. Let it swell at medium heat for 10 minutes. Remove from heat, mix in the chickpeas, and season with salt and pepper. Slice the cooked chicken into strips and serve together with the wheat porridge on plates. Sprinkle additional pepper and garnish with a sprig of dried juniper berries.
