The Watermelon Radish Salad from Spoonsparrow is perfect for hot days.
Ingredients
- 600 g medium watermelon (0.25 medium watermelons)
- 0.5 bunch radishes
- 1 mild white onion
- 5 g mint (1 handful)
- 5 g micro herbs (1 handful; e.g., basil or arugula)
- 150 g goat cream cheese (30% fat in the tub)
- 1 tbsp Apple cider vinegar
- 40 ml vegetable broth
- Salt
- Pepper (freshly ground)
- 3 tbsp olive oil
- fine fleur de sel
Instructions

Cut watermelon lengthwise, then slice crosswise into about 5 mm thick slices; remove rind and any seeds if present. Peel radishes, wash, and shave thinly. Peel onion, halve, and cut into fine strips. Wash mint and micro herbs, pat dry.

Arrange watermelon on plates or a platter. Distribute radish shavings and onion strips over it, sprinkle with mint and micro herbs, and spoon small dollops of goat cheese on top.

Whisk vinegar with broth, salt, pepper, and oil to make a dressing. Drizzle over the salad, grind additional pepper on top, and dust with fleur de sel before serving.
