Water Lily Flower Soup

A fresh soup featuring water lily flowers and aromatic spices.
Ingredients
- 2 kg water lilies
- 2 large onions
- 60 g Butter
- 1 chicken broth
- fresh or jarred horseradish
- a pinch nutmeg
- 1 tbsp capers
- a pinch cinnamon
- Salt
- ground pepper
Instructions

Clean the water lilies thoroughly and blanch them in plenty of salted water for 2-3 minutes, then drain and set aside.

Dice the onions and sauté in a large pot with hot butter until translucent. Add the water lilies, cook briefly, pour in chicken broth, and simmer for about 10 minutes. Remove from heat, add capers, and blend the soup smooth. Season with salt, pepper, nutmeg, horseradish, and cinnamon to taste.
