Ingredients
- 500 g diced beef (e.g., shank)
- 0.5 head celery root
- 4 Carrots
- 1 stalk leek
- 1 stale roll
- 500 g ground meat
- 1 egg
- Salt
- ground pepper
- 2 tbsp chopped parsley
Instructions

Add beef and 1.2 l water to a pot and bring to a boil. Then simmer for about 1 hour.

Meanwhile, peel the celery root and carrots; slice the celery into rounds and quarter them. Cut the carrots diagonally into large pieces. Wash, trim, and cut the leek into rings. Add these to the beef and simmer for another ~30 minutes.

Soak the stale roll in a little water. Mix with ground meat and egg. Season with salt and pepper, then cook in simmering salted water for about 5 minutes until firm. Add to the soup and season with salt and pepper. Sprinkle with parsley before serving.
