Octopus Apple Salad with Celery

- 1 untreated lemon
- 1 octopus (ready to cook, ca. 1 kg)
- 2 Bay leaves
- 1 dried peperoncino
- 3 stalks celery
- 2 Apples
- 4 tbsp Lemon juice
- 4 tbsp olive oil
- Salt
- ground pepper

Rinse the lemons under hot water and slice them. Wash the octopus as well and place it with the lemon slices, bay leaves, and peperoncini in a pot; add enough water to cover everything. Bring to a boil and simmer over medium heat for 1½ hours. In the meantime, wash, trim, finely chop the celery greens, and cut the stalks into thin rings. Peel, quarter, core, and slice the apples into narrow strips.

Immediately mix with 2 tbsp lemon juice. Whisk together the remaining lemon juice, olive oil, salt, and pepper to make a vinaigrette. Remove the cooked octopus from the broth, let it cool, cut the arms into bite-sized pieces, and also chop parts of the body small. Combine with celery, apples, and vinaigrette; spread on plates and garnish with celery greens.
