Ingredients

  • 12 sheets of Wan‑Tan dough
  • 1 Egg white
  • vegetable oil (for frying)
  • 12 large raw shrimp, peeled and deveined
  • 2 tbsp Light soy sauce
  • chili powder
  • 80 g mango chutney (jarred)
  • chervil (for garnish)

Instructions

    Brush each dough square with egg white and fold into triangles. Press firmly and fry in hot oil 2–3 minutes per batch until crisp. Gently slide the triangles into the hot fat (~170 °C) and press lightly downward with a spoon handle so the tips curve upward. Bake each side until golden brown. Drain on paper towels and cool.

    Rinse the shrimp and pat dry. Toss with soy sauce and chili powder. Coat in starch and fry in hot oil for about 2 minutes until golden brown. Drain on paper towels.

    Place a teaspoon of mango chutney on each Wan‑Tan triangle and top with shrimp. Garnish with chervil before serving.
