Ingredients

  • 100 g ground walnuts
  • 200 g butter
  • 150 g sugar
  • vanilla beans
  • 1 egg
  • 1 pinch salt
  • 100 g flour
  • 100 g cornstarch
  • 4 Tbsp lingonberry jam
  • 200 g powdered sugar
  • 2 tbsp lemon juice
  • 45 beautiful walnut half‑kernels

Instructions

    Knead the ground walnuts with butter, sugar, vanilla extract, egg, salt, flour and starch. Wrap in plastic wrap and refrigerate for 30 minutes.

    Roll dough into 3–4 mm thick sheets. Cut out 90 circles with a wavy edge (3–4 cm diameter) and place on parchment‑lined baking sheet. Bake at 180 °C for about 10–12 minutes. Let cool.

    Warm the jam and strain it through a sieve. Brush half of the cookies with the jam, then sandwich each with an unbrushed cookie. Mix powdered sugar with lemon juice until thick; put in a small zip‑lock bag, cut a corner and decorate the cookies in a grid pattern. Immediately place one walnut half on each and let dry.
