Banana Hazelnut Muffins

Ingredients

  • 2 Bananas
  • 2 tbsp lemon juice
  • 175 g butter
  • 100 g sugar
  • 4 tbsp Honey
  • 3 eggs
  • 40 g chopped hazelnuts
  • 175 g flour
  • 1 tsp Baking powder
  • 12 whole hazelnut halves (halved)
  • paper muffin liners
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 180°C fan. Place paper liners into the depressions of a muffin tin. Peel the bananas, drizzle with lemon juice and mash with a fork.

    Beat the butter with sugar and honey until fluffy. Gradually fold in the eggs. Stir in the banana mash and hazelnuts. Quickly mix in flour and baking powder, then spoon the batter into the liners.

    Top each filling with two halves of hazelnut. Bake in the preheated oven for about 30 minutes until golden brown. Remove from tin, cool on a rack, and dust with powdered sugar before serving.
