Walnut Bread French Style

- 450 g spelt flour
- 25 g fresh yeast
- 100 g natural sourdough starter
- 1 tbsp salt
- 150 g chopped walnuts
- 2 tbsp olive oil
- flour (for working)

Place the flour in a bowl and form a well in the center. Break the yeast into it and mix with 4 tbsp lukewarm water. Cover and let rise for about 15 minutes. Then add the sourdough starter, salt, and about 275 ml lukewarm water, kneading everything into a smooth dough. Cover again and let rise for another 45 minutes. On a floured work surface knead the dough well, fold in the chopped walnuts and oil, divide into two portions, and shape each into two baguettes. Place on a baking sheet lined with parchment paper, cut diamond-shaped slashes, and brush with lukewarm water. Cover and let rise for another 15 minutes.

Preheat the oven to 180°C (356°F) fan-forced. Place a fireproof bowl of water in the oven.

Bake the loaves for about 35 minutes until golden brown. Remove from the oven and cool on a wire rack.
