Pumpkin Bread

Ingredients
- 200 g pumpkin flesh (cleaned and weighed)
- 2 tbsp butter
- 100 ml lukewarm water
- 500 g spelt flour
- 1 cube yeast
- 1 tsp sugar
- ½ tsp cinnamon powder
- ½ tsp ginger powder
- 2 tsp salt
- 50 g chopped pumpkin seeds
- 20 g pumpkin seeds (for topping)

Cut the pumpkin into small pieces and sauté in hot butter, pour in 1 cup of water, cover and steam for about 10 minutes until soft, then finely mash with a fork.

Whisk the yeast into the lukewarm water with the sugar until smooth.

Add flour to a bowl, then add pumpkin, cinnamon, ginger, and salt. Add the dissolved yeast and knead thoroughly with the paddle attachments of an electric hand mixer. If the dough is still stiff, add another 2–3 tbsp of water. Finally fold in the chopped pumpkin seeds. Cover the dough and let it rise in a warm place for 45 minutes.

Knead the dough again with floured hands, shape into a loaf, and place it in a greased loaf pan. Brush with a little water and sprinkle with pumpkin seeds. Press the seeds lightly, cover, and let rise for another 45 minutes. Preheat the oven to 200°C. Place a heat‑proof dish of boiling water inside the oven. Bake the bread in the middle rack for about 35 minutes until golden brown.
