Waffles with Berries

Ingredients

  • 2 tbsp Soy flour
  • 300 g flour (Type 550)
  • 1 tsp Baking powder
  • 80 g sugar
  • 1 Tbsp vanilla sugar
  • a pinch of salt
  • 2 tbsp margarine
  • 300 ml rice drink (rice milk)
  • 50 ml sparkling mineral water
  • margarine (for the waffle iron)
  • 200 ml cold soy cream
  • 2 packets whipping stabilizer
  • mixed berries (for serving)

Instructions

    Whisk the soy flour with 2 tbsp cold water and let it sit for a few minutes. In a bowl combine the flour, baking powder, sugar, vanilla sugar, and a pinch of salt. Melt the margarine over low heat with the soy flour, then add the rice drink and mineral water to the flour mixture and stir well. Let rest about 20 minutes.

    Preheat the waffle iron and grease it lightly with margarine. Pour one ladleful of batter into each section and bake a waffle. Repeat until about eight waffles are made, keeping them warm in an oven at 80 °C fan if desired.

    Meanwhile whisk the soy cream with the whipping stabilizer until stiff. Serve each waffle with a dollop of whipped cream and berries.
