Vietnamese-Style Marinated Salmon with Cucumber and Coriander

Ingredients

  • 400 g salmon (pre‑cooked)
  • 200 g daikon radish
  • 1 cucumber
  • 1 bunch Coriander
  • 5 tbsp rice
  • light fish sauce
  • 1 chili pepper
  • 2 tbsp Lime juice
  • 1 tsp Raw Sugar
  • 1 Garlic clove

Instructions

    Lightly toast the rice in a non‑stick pan until golden brown. Let cool and grind into fine powder.

    Wash, peel, halve cucumber lengthwise, remove seeds and slice very thin or julienne.

    Peel daikon radish and cut into thin strips or julienne.

    Tear coriander leaves from stems.

    Finely chop chili pepper and garlic; mix with lime juice, sugar and fish sauce to make the dressing.

    Wash salmon, pat dry and slice into very thin pieces. Arrange on a plate. Distribute cucumber and daikon over the salmon and sprinkle coriander on top. Drizzle with the dressing and dust with rice powder before serving.
