Salmon Trout in Puff Pastry

Ingredients
- 1 salmon trout (about 700g)
- 1 tbsp Lemon Juice
- Salt
- Pepper
- 450 g frozen puff pastry
- 1 bunch parsley
- 50 g butter
- 1 egg yolk
- 2 tbsp milk
- 200 g crème fraîche
- 1 tsp Mustard
- 1 tsp horseradish
- fat for the baking sheet
- lettuce leaves for decoration

Wash and pat dry the salmon trout, drizzle inside and out with lemon juice, and season with salt and pepper. Thaw the puff pastry. Wash parsley, shake dry, and finely chop. Melt butter in a pan and mix with parsley; brush the trout inside and out with this mixture.

Preheat oven to 200°C.

Roll out the puff pastry on a lightly floured surface, place the salmon trout on it, and fold it completely around. Reserve one quarter of the dough for scales. Seal seams well with water. Whisk egg yolk with milk and brush half of the mixture over the trout. Cut circles about 5 cm in diameter from the remaining dough, arrange them like scales over the trout, and brush with the rest of the egg mixture. Grease a baking sheet, carefully place the trout on it, and bake for 30 minutes.

Lay a plate with lettuce leaves and arrange the trout on top.

Whisk crème fraîche with mustard and horseradish and serve alongside the trout.
