Ingredients

  • 100 g glass noodles
  • 1 stalk Celery
  • 2 carrots
  • 1 yellow bell pepper
  • 1 handful Thai basil
  • 8 rice paper sheets (Ø 22 cm)
  • light soy sauce
  • 16 stalks sliced garlic

Instructions

  1. 1.

    Pour boiling water over the glass noodles in a bowl and let them soak for about 10 minutes until soft. Then drain, rinse with cold water and cut into ~5 cm pieces using kitchen scissors.

    Wash, trim, or peel the celery, carrots, and bell pepper and slice into thin sticks. Remove basil leaves from stems.

    Fill a shallow dish slightly larger than the rice paper sheets with water. Place a kitchen towel next to it and set another towel ready. Dip each sheet individually in the water for about 1 minute until softened. Then carefully lay them on the first towel and pat dry with the second towel.

    Place some vegetables, noodles, and Thai basil in the center of each soft rice paper sheet. Drizzle a little soy sauce over it. Top with two stalks of sliced garlic. Fold the sides of the paper inward and roll lengthwise to seal.

    Serve as desired with salad and dips.
