Ingredients

  • 16 sheets frozen rice paper (approx. 20 x 20 cm)
  • 300 g thin rice noodles
  • Salt
  • 16 small pak choi leaves
  • 16 shrimp (prepped)
  • 0.5 lime (juice)
  • Salt
  • pepper (ground)

Instructions

    Place rice paper briefly in cold water and spread on damp kitchen towels.

    Cook noodles for a short time in boiling salted water according to package instructions, drain, rinse with cold water, and let dry.

    Clean pak choi, remove stems, blanch briefly in boiling salted water, rinse, and pat dry.

    Drizzle shrimp with lime juice and season with salt and pepper.

    Place one pak choi leaf, some noodles, and one shrimp on each rice paper sheet, fold the ends inwards, and roll tightly.

    Arrange rolls in a greased bamboo steamer. Place in a large wok, bring water to boil, cover, and steam for about 8 minutes. Reheat noodles briefly in boiling water, drain, and serve with spring rolls and soy sauce.
