Ingredients

  • 2 veal cutlets
  • 1 lemon (unprocessed)
  • 1 tsp peppercorns (to taste)
  • 150 g clarified butter (as needed)
  • 1 egg
  • 8 tbsp breadcrumbs
  • 3 tbsp Flour

Instructions

    Flatten the cutlets with a rolling pin or the flat side of a knife.

    Season to taste with some lemon zest and crushed pepper.

  3. 3.

    Place the flour, breadcrumbs, and eggs on separate plates; set aside the clarified butter. Beat the eggs together.

    Coat each cutlet first in flour, then dip it into the beaten eggs.

    Next coat them in breadcrumbs, pressing the crumbs firmly onto the meat. If the coating does not stick well, dip again in egg and recoat with breadcrumbs.

    Heat plenty of clarified butter in a deep pan and fry the cutlets on both sides until golden brown while floating in the fat.

    Drain on paper towels and serve hot with lemon wedges.
