Veal Schnitzel

Ingredients

  • 4 veal cutlets (about 130 g each)
  • Salt
  • black pepper
  • 2 Eggs
  • 3 tbsp wheat flour
  • 100 g breadcrumbs
  • 3 tbsp vegetable oil
  • 3 large zucchini
  • 2 tbsp olive oil
  • 2 sprigs thyme

Instructions

    Flatten the cutlets with a meat mallet and season with salt and pepper. Set up three shallow dishes with wheat flour, beaten egg, and breadcrumbs, then coat each veal cutlet in turn. Fry the breaded cutlets in a pan with hot vegetable oil for 2-3 minutes on each side until golden brown.

    Meanwhile, wash the zucchini, trim the ends, and cut into about 3 cm cubes. Sauté in 2 tbsp olive oil for 2-3 minutes, seasoning with salt and pepper. Finish with fresh thyme leaves.

    Plate the veal schnitzel on a flat dish and serve with the sautéed zucchini.
