Fennel Salad with Radishes and Citrus Dressing

The fennel salad with radishes and citrus dressing by Spoonsparrow is a light lunch and also ideal for bringing to work.

Ingredients

  • 2 bulbs of fennel
  • 300 g radishes
  • 1 lemon
  • 1 tsp Honey
  • 3 tsp rapeseed oil
  • 3 tsp olive oil
  • Salt
  • Pepper

Instructions

    Clean, wash and halve the fennel; if needed, cut away the hard core and slice the green stalks into rings. Slice the fennel halves lengthwise into thin ribbons. Set aside some fennel greens for garnish.

    Peel, wash and also slice the radishes finely. Squeeze the lemon. Whisk the juice with 2 tbsp water, honey, and both oils. Lightly salt and pepper, then mix the fennel and radishes into the dressing and let it rest for about 30 minutes.

    Before serving taste again and arrange on plates or a platter. Garnish with chopped fennel greens and serve.
