Vegetarian whole wheat wraps from Spoonsparrow are great for take‑out, such as for lunch breaks.

Ingredients

  • 1 Red Onion
  • 100 g brown mushrooms
  • 2 Tomatoes
  • 1 red bell pepper
  • 200 g kidney beans (drained weight; canned)
  • 1 romaine lettuce heart
  • 10 g chives (0.5 bunch)
  • 150 g yogurt (3.5 % fat)
  • 1 tsp lemon juice
  • Salt
  • Pepper
  • 4 whole wheat tortilla sheets

Instructions

    Peel and dice the onion. Clean the mushrooms and slice them. Wash the tomatoes, quarter, core, and dice. Clean, wash, and cube the bell pepper. Rinse the beans in a sieve and let drain. Wash the lettuce heart, clean, dry spin, and cut leaves into strips. Wash chives, shake dry, and cut into rolls.

    Stir yogurt with lemon juice and chives, seasoning with salt and pepper.

    Lay tortillas on a work surface and top with prepared ingredients. Drizzle with yogurt and roll into wraps. A yogurt dip pairs well with the vegetarian whole wheat wraps.
