Ingredients

  • 2 red onions
  • 3 tbsp Rapeseed oil
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 0.25 tsp Dried thyme
  • Salt
  • Pepper
  • 4 soy sausages (100 g each)
  • 25 g lamb's lettuce
  • 4 rye whole‑grain rolls (sourdough)
  • 4 tbsp mustard

Instructions

    Peel, halve and slice the onions into thin strips. Heat 1 tbsp oil in a pan, sauté onions for 5 minutes over medium heat. Add honey and caramelize for 3 minutes. Deglaze with vinegar and season with thyme, salt, and pepper. Remove onions from the pan and set aside.

    Heat the remaining rapeseed oil in the same pan, brown the sausages on all sides for 5–7 minutes over medium heat.

    Meanwhile, rinse and dry the lamb's lettuce. Slice each roll in half lengthwise without cutting through completely. Fill rolls with lettuce, sausage, onions, and drizzle with mustard.
