Pork Cutlet Roast

Ingredients

  • 1.2 kg pork cutlet (bone-in, whole piece)
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp chopped rosemary needles
  • 3 tbsp olive oil
  • 500 g shallots
  • 3 Carrots
  • 1 kg potatoes
  • 250 ml meat broth

Instructions

    Rub the pork with salt, pepper and rosemary, place it in a roasting pan with the olive oil and roast in a preheated oven at 180°C for about 1½ hours.

    Peel the potatoes, shallots and carrots, cut them into bite‑size pieces and scatter them around the meat after about 30 minutes of cooking time.

  3. 3.

    After another 30 minutes add the broth to the pan.

    Slice the pork and serve it with the vegetables.
