Ingredients
- 400 g cabbage
- 200 g celery root
- 1 Carrot
- 500 g beetroot
- 1 onion
- 2 tbsp olive oil
- 1 l vegetable broth
- Salt
- Pepper
- cumin (ground)
- coriander (ground)
- 1 tbsp white vinegar
- 4 tbsp Sour cream
- dill (for garnish)
Instructions

Wash, trim and slice cabbage into fine strips or shave. Peel celery root, carrot, and beetroot and finely dice all vegetables.

Peel and cube onion. Add a little oil to a pan and sauté onions over medium heat until translucent. Pour in broth and add remaining vegetables. Simmer gently for about 40 minutes.

Season with salt, pepper, cumin, coriander, and vinegar. Serve on plates topped with sour cream and dill garnish.
