Vegetarian Pizza Rolls

Ingredients
- 75 ml oat milk
- 75 ml lukewarm water
- 20 g fresh yeast
- 1 tsp sugar
- 1 tbsp Olive Oil
- 250 g whole wheat flour
- 0.5 tsp Salt
- 1 Zucchini
- 1 handful Arugula
- 3-4 tbsp tomato paste
- oregano
- 50 g shredded mozzarella

Warm oat milk and water together. Crumble the yeast and dissolve it with 1 tsp sugar in the oat milk-water mixture. Add oil and stir.

Mix flour with salt, place on a work surface and press a well into the center. Carefully pour in the liquid and knead gradually into a firm dough. Knead the dough by hand for about 10 minutes. Then let rise in a warm spot for about 30 minutes.

Wash the zucchini and slice it lengthwise into thin strips with a vegetable peeler. Wash and trim the arugula.

Roll out the dough on a baking sheet lined with parchment paper and cut it in half lengthwise. Spread tomato paste over each half and sprinkle oregano on top.

Add zucchini slices, arugula and some mozzarella on top, then roll the dough sheets along their length. Cut the rolled sheets into equal pieces with a sharp knife and place them on the baking sheet.

Bake the vegetarian pizza rolls in a preheated oven at 200 °C (180 °C fan; gas level 3) for about 15 minutes.
