Vegetarian Pizza Rolls

Vegetarian pizza rolls from Spoonsparrow are a hit with children and parents because they are quick and easy to prepare, healthy and delicious!

Ingredients

  • 1 onion
  • 150 g Corn (canned)
  • 1 red bell pepper
  • 150 g Mushrooms
  • 100 g cherry tomatoes
  • 2 tbsp Tomato paste
  • 100 g heavy cream
  • 200 g Sour Cream
  • Salt
  • Pepper
  • 0.5 tsp Dried oregano
  • 0.5 tsp Dried basil
  • 150 g Medium Gouda
  • 4 Whole wheat rolls
  • 3 stems basil

Instructions

    Peel and finely dice the onion. Drain the corn in a sieve. Clean, wash, halve, remove seeds and white membranes from the bell pepper, and finely dice the flesh. Clean and slice the mushrooms thinly. Clean, wash, dry the tomatoes and quarter them.

    Mix tomato paste with heavy cream and sour cream well with a whisk. Season with salt, pepper, oregano and basil.

    Grate the cheese and mix about half with the vegetables into the cream mixture.

    Line a baking sheet with baking paper. Halve the rolls, place them on the baking sheet and spread them with sauce. Sprinkle the remaining cheese over them.

    Bake the vegetarian pizza rolls at 200 °C (Fan 180 °C; Gas: Mark 3) for about 15–20 minutes.

    Meanwhile, wash, shake dry, pluck leaves and finely chop the basil and sprinkle over the finished pizza rolls.
