Vegetarian Patties

Vegetarian patties from Spoonsparrow taste pure or between tomatoes, salad and burger buns as a veggie burger delight!

Ingredients

  • 1 onion
  • 1 Garlic clove
  • 1 red chili pepper
  • 250 g carrots
  • 250 g zucchini
  • 3 tbsp olive oil
  • 250 ml vegetable broth
  • 75 g spelt whole-grain semolina
  • 2 Eggs
  • Salt
  • Pepper (freshly ground)
  • whole-wheat breadcrumbs (as needed)

Instructions

    Peel and finely chop the onion and garlic. Slice the chili pepper lengthwise, deseed, wash and finely chop.

    Grate the carrots finely after peeling. Grate the zucchini finely after washing. Wash the chives, dry them and cut into fine ribbons.

    Heat 1 tbsp olive oil in a pot. Add onions, garlic and chili and sauté for 2 minutes over medium heat. Pour in vegetable broth and bring to a boil. Stir in the semolina and let it swell on very low heat for about 5 minutes. Whisk in the eggs.

    Divide the semolina mixture in half. Mix zucchini into one half and carrots into the other. Add breadcrumbs as needed. Season with salt and pepper. Shape each portion into 8 flat patties and fry them sequentially: heat 1 tsp oil in a pan, add 4 patties and cook for 3–4 minutes per side until golden brown. Repeat with remaining patties. Keep patties warm in a preheated oven at 80 °C (convection 60 °C; gas stove level 1).
