Vegetarian Pasta Salad

Ingredients

  • 1 Garlic clove
  • 300 g fresh baby spinach
  • 500 g mixed cocktail tomatoes
  • 1 tbsp Olive Oil
  • 1 tsp tomato paste
  • a pinch turmeric powder
  • 50 ml cashew‑based plant milk substitute (cashew cream)
  • 0.5 lemon (juice)
  • Salt
  • Pepper
  • 300 g pre‑cooked whole wheat pasta

Instructions

    Peel and finely chop the garlic clove. Wash the spinach and tomatoes, then halve the cocktail tomatoes.

    Heat the olive oil in a pan and briefly sauté the garlic until translucent. Add the tomato paste and turmeric, cooking for 1–2 minutes. Toss in the tomatoes and spinach, stirring quickly. Pour in the cashew cream and finish by seasoning with lemon juice, salt, and pepper.
