Ingredients

  • 220 g spelt flour
  • 14 g dry yeast
  • 1 tsp sugar
  • a pinch of salt
  • 5 tbsp olive oil
  • 150 g water
  • 200 g cocktail tomatoes
  • 100 g fresh mushrooms
  • 1 handful Arugula
  • 1 Red Onion
  • 100 g Sour cream
  • 2 tsp balsamic vinegar
  • Salt
  • Pepper

Instructions

    For the dough, combine flour, yeast, sugar and salt roughly. Add 3 tbsp olive oil and water, then knead into a smooth dough with a stand mixer. Shape the dough into a ball, place it in a bowl and let rise at room temperature.

    Halve the tomatoes, clean and slice the mushrooms, wash and pat dry the arugula. Peel the onion and cut into rings.

    Divide the dough into two equal pieces, brush each with 1 tsp oil and roll very thin on a parchment-lined work surface. Transfer the dough discs with parchment onto two baking trays.

    Spread sour cream over the dough and top with onions, mushrooms and cocktail tomatoes.

    Bake the first Flammkuchen with sour cream glaze in a preheated oven at 220 °C (200 °C fan; gas: level 3–4) for about 10 minutes. Remove and bake the second Flammkuchen similarly. Finish both by garnishing with arugula, remaining olive oil, balsamic vinegar, salt and pepper.
