Ingredients

  • 200 g spelt flour type 1050 (+ 1 tbsp for working)
  • 0.5 cube fresh yeast
  • 90 ml warm water
  • 3 tbsp olive oil
  • Salt
  • 200 ml pizza tomatoes
  • 0.5 tsp Italian herbs
  • 1 garlic clove (chopped)
  • Salt
  • pepper (from mill)
  • 1 tbsp Olive Oil
  • 80 g spinach (chopped)
  • 50 g pizza cheese (grated)
  • 150 g mozzarella

Instructions

    Sift the flour into a bowl, create a well in the center. Crumble the yeast into a little water and pour it into the well. Sprinkle with flour and cover for about 20 minutes to rise. Add the remaining water with salt and oil, knead into a smooth dough. Cover and let rise again for about 30 minutes in a warm place.

    Knead the dough once more and divide it into 12 pieces. Roll each piece into a small pizza on a floured surface and place them on baking sheets lined with parchment paper. Spread pizza tomatoes over the bases, season with salt and pepper, and sprinkle chopped garlic on top. Blanch the spinach, drain, and squeeze out excess moisture.

    Slice the mozzarella and distribute it along with the grated cheese over the pizzas. Tear the spinach into pieces and scatter it across the tops. Drizzle a little olive oil and bake in a preheated oven at 220°C (425°F) for about 15 minutes on both lower and upper heat. Serve the vegetarian mini pizzas hot.
