Chicken Balls with Coriander

Ingredients

  • 1 old-fashioned roll
  • 6 coriander stems
  • 1 Shallot
  • 2 Garlic cloves
  • 1 tsp butter
  • 400 g skinless chicken breast fillet
  • 2 Eggs
  • 1 tbsp breadcrumbs
  • Salt
  • Pepper (freshly ground)
  • 1 pinch grated lemon zest
  • vegetable oil (for frying)
  • lavender leaf (for serving)

Instructions

    Soak the roll in cold water. Wash the coriander, pluck the leaves from the stems and finely chop. Peel and finely chop the shallot and garlic. Sauté in butter until translucent. Rinse the chicken breast, pat dry and feed through the finest setting of a meat grinder. Drain the roll, crumble it and mix with the ground chicken, coriander, onion, eggs and breadcrumbs; season with salt, pepper and lemon zest.

    With damp hands form small balls and fry them in plenty of oil, turning, for 6-8 minutes until golden.

    Drain on kitchen paper and serve on lavender leaves.
