The vegetarian minestrone with broccoli and beans is quick and easy to make, keeps you full for a long time, and delivers many healthy ingredients.
Ingredients
- 2 carrots
- 2 red bell peppers
- 400 g broccoli florets
- 2 Spring Onions
- 2 tbsp olive oil
- 1 tsp tomato paste
- 1 l vegetable broth
- 200 g white beans (canned)
- Salt
- ground pepper
- finely chopped basil
- freshly grated Parmesan

Peel and dice the carrots. Wash, halve, trim, and dice the bell peppers. Rinse the broccoli florets and drain them. Wash the spring onions, trim, and slice into thin rings. In a pot, sauté the prepared vegetables in hot oil for 2-3 minutes. Stir in the tomato paste, pour in the broth, and bring to a boil. Drain the beans, add them to the soup, and simmer gently for about 10 minutes. Season with salt and pepper.
