Vegan Pea Potato Soup

Ingredients

  • 1 onion
  • 1 Garlic clove
  • 1 tbsp plant oil
  • 800 ml vegetable broth
  • 500 g waxy potatoes
  • 500 g peas (fresh or frozen)
  • 2 tbsp freshly chopped mint
  • 100 ml soy cream
  • Salt
  • 1 tsp lemon juice
  • ground coriander
  • black pepper (from the mill)
  • mint for garnish

Instructions

    Peel and finely dice the onion and garlic. Sauté together in hot oil in a pot until translucent. Deglaze with broth. Peel, wash and cube the potatoes. Add to soup and simmer about 10 minutes. Then add peas and cook another ~10 minutes until done. Roughly mash with a potato masher and add more broth if needed.

    Add mint to the soup. Whisk the soy cream until creamy and fold in 4 tbsp for garnish. Season with salt, lemon juice, coriander and pepper. Serve on plates, place a dollop of soy cream in the center, garnish with mint.
