Vegetarian Grilled Skewers

Ingredients

  • 1 large zucchini
  • 4 bell peppers (red and yellow)
  • 200 g large mushrooms
  • 1 Garlic clove
  • 1 lemon (juice)
  • 80 ml olive oil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp freshly chopped parsley

Instructions

    Wash, trim, halve the zucchini lengthwise and cut into ~1 cm thick slices. Wash, halve, trim and cut the bell peppers into bite‑size pieces. Clean the mushrooms and quarter them. Alternate the prepared vegetables on about 12 wooden skewers.

    Peel and press the garlic. In a small bowl mix with lemon juice, olive oil, salt and pepper. Brush the skewers with the mixture and grill over high heat, turning regularly for about 6 minutes.

    Remove the vegetarian grilled skewers from the grill and drizzle with remaining marinade. Sprinkle with parsley before serving.
