Vegetarian Cauliflower Casserole

Ingredients

  • 750 g cauliflower
  • Salt
  • 100 g smoked tofu
  • 1 tbsp capers
  • 125 g mascarpone
  • 2 Eggs
  • Pepper
  • Lemon juice
  • 30 g pine nuts
  • 30 g vegetarian hard cheese
  • 1 slice toast bread
  • 4 stems oregano

Instructions

    Clean the cauliflower and cut into evenly sized florets. Blanch in a pot of boiling salted water for 5 minutes, shock with cold water and drain well.

    Cut tofu into small cubes. Finely chop half of the capers. Whisk mascarpone with one whole egg and one yolk. Season with salt, pepper, chopped capers, and lemon juice. Grate the cheese finely. Remove the cores from the toast bread, then grate or pulse in a food processor. Beat the remaining egg white into stiff peaks, fold in pine nuts, tofu cubes, bread crumbs, and cheese, seasoning with salt.
