Fruit Celery Salad with Yogurt

Ingredients

  • 50 g walnut kernels
  • 3 stalks celery
  • 3 oranges
  • 1 large red-skinned apple
  • 1 Kiwi
  • 1 tbsp Lemon Juice
  • 400 g yogurt (0.1% fat)
  • 60 g crispbread (4 slices)
  • 80 g cream cheese (4 tbsp; 0.2% fat)

Instructions

    Coarsely chop walnuts and toast them in a dry pan over low heat for 2–3 minutes. Remove from heat.

    Wash celery, de-stem it, and slice thinly.

    Peel oranges with a sharp knife. Cut fruit segments between the membranes, catching the juice.

  4. 4.

    Peel apple, halve it, remove core. Dice flesh. Peel kiwi, cut lengthwise, slice thinly. Mix kiwi slices, apple cubes, orange segments from 2 oranges, lemon juice, and celery.
