Vegetable Tortilla

Ingredients

  • 400 g firm potatoes
  • 250 g kohlrabi (with leaves)
  • 150 g Carrots
  • 1 onion
  • 4 tbsp olive oil
  • 2 tbsp butter
  • 4 eggs
  • 50 ml whipping cream (min 30% fat)
  • Salt
  • Pepper (freshly ground)
  • 1 pinch freshly grated nutmeg

Instructions

    Wash, peel the potatoes, kohlrabi and carrots (reserve the green of the kohlrabi), and slice them into about 1 cm thick rounds. Peel the onion and dice finely.

    Heat olive oil in a large non‑stick pan and fry the potato slices while turning for 3–4 minutes. Then add the carrots and kohlrabi, cooking on medium heat for another 10 minutes. Wash the kohlrabi leaves, dry them by shaking, and scatter over the vegetables. Beat the eggs with cream, salt, pepper, and nutmeg, pour over the veggies. Cover and cook on low heat until the underside is golden brown. Flip the tortilla onto a plate, slide it back into the pan, and fry the other side until golden.
