Vegetable Stir-Fry with Beef

Ingredients
- 3 Rindersteaks (from the loin, about 2 cm thick)
- 4 Knoblauchzehen (thinly sliced)
- 4 Möhren (finely julienned)
- 1 Handvoll Sojasprossen
- 150 g grüne Bohnen
- 1 kleine Mangoldstaude
- 200 g Champignons (thinly sliced)
- Sojasauce
- 1 kleine rote Chilischote (deveined and finely chopped)
- Sesamöl
- Salz
- Pfeffer (from the mill)

Slice the beef into thin strips. Mix with 2 tbsp soy sauce, 2 tbsp oil, salt, and pepper; let marinate overnight if possible.

Wash and trim the beans, blanch in boiling salted water for about 8 minutes, then drain. Wash the Swiss chard, cut the greens into strips, set aside most of the stems.

Heat 2 tbsp oil in a wok, stir-fry carrots, beans, mushrooms, and garlic until crisp. Add chili. Push vegetables aside, add beef, and stir-fry vigorously. Mix beef with vegetables. Add chard and bean sprouts, cook for about 1 minute more. Season with soy sauce, salt (careful as soy sauce is salty), and pepper. Serve immediately.
