Vegetable Stew with Potatoes, Kohlrabi, Onions in Creamy Sauce

A hearty vegetable stew featuring potatoes, kohlrabi, onions, bacon and sausages in a creamy sauce that Spoonsparrow always recommends.

Ingredients

  • 2 EL Butter
  • 1 l meat broth
  • 1 bundle carrots
  • 400 g Potatoes
  • 2 kohlrabi
  • 2 red onions
  • 150 g thick-cut bacon
  • 2 pairs Vienna sausages
  • 0.333 l heavy cream
  • 1 bundle parsley (chopped)

Instructions

    Peel and slice the onions into rings. Peel and dice the potatoes, carrots, and kohlrabi. Heat the butter in a large pot, sauté the onion rings until translucent, add the remaining vegetables, cook briefly, then pour in the broth and bring to a boil. Reduce heat, season with salt and pepper, and simmer gently for 30-40 minutes.

    Cut the bacon into small cubes and brown it in a pan, then add it to the pot. Stir in the cream and bring the soup to a brief boil again. Remove from heat and warm the sausages in the stew. Ladle the stew into bowls, sprinkle with parsley, and serve.
