Vegetable Soup with Turkey

The vegetable soup with turkey from Spoonsparrow is not only unbeatable delicious, but it can also help when you have a cold. Try it yourself!
Ingredients
- 1 Zucchini
- 300 g Turkey breast fillet
- 1 onion
- 1 Garlic clove
- 1 tbsp Olive Oil
- 700 ml vegetable broth
- 1 sprig thyme
- 1 stalk oregano
- 1 stalk rosemary
- 75 g mixed vegetables (frozen)
- 1 tbsp grated Parmesan
- 2 stems basil
Instructions

Wash, peel and dice the zucchini. Cut the turkey into small pieces. Peel and finely chop the onion and garlic.

Heat oil in a pot. Sauté the onion and garlic over medium heat for a short time. Add the meat and cook briefly. Pour in the broth, bring to a boil, then simmer on low heat for about 5 minutes.

Meanwhile wash, dry shake and finely chop thyme, oregano, and rosemary. Add the zucchini cubes, mixed vegetables, and herbs to the pot, cover and simmer for another 15 minutes.

Wash basil, dry shake it and pluck the leaves from the stems. Serve the soup sprinkled with Parmesan and basil.
