Vegetable Soup with Radishes

- 200 g starchy potatoes
- 100 g Knollensellerie
- 1 Shallot
- 1 Garlic clove
- 1 EL Butter
- 800 ml vegetable broth
- 6 Radishes
- 40 g radish sprouts
- 100 g crème fraîche
- Salt
- a splash lemon juice
- Pepper

Peel and dice the potatoes and knollensellerie. Peel and finely dice the shallot and garlic. Sauté both briefly in hot butter. Add the potatoes and knollensellerie, then pour in the broth. Simmer gently for about 20 minutes, stirring occasionally.

Wash, trim, and roughly chop the radishes. Rinse the sprouts. Set aside a few leaves for garnish. Add the remaining radishes to the soup and blend until smooth. If desired, simmer longer or add more broth to reach preferred consistency.

Stir in the crème fraîche and season with salt, lemon juice, and pepper.
