Cucumber Yogurt Soup

Ingredients

  • 1 salad cucumber
  • 600 g yogurt (1.5% fat)
  • 1 tbsp Lemon Juice
  • 200 g Buttermilk
  • 1 tsp cumin
  • Salt
  • ground pepper

Instructions

    Peel the cucumber, quarter it, scrape out the seeds, and dice into small cubes; set aside 2 tbsp of cucumber cubes for garnish.

    Dice feta cheese into small cubes and reserve 2 tbsp. Blend the cucumber pieces, feta, and 1 tsp cumin together; pour in yogurt, lemon juice, and buttermilk, stirring to combine.

    Season the soup with salt and pepper, then ladle into glasses. Garnish with reserved cucumber and feta cubes and a sprinkle of cumin.
