Ingredients
- 1 Carrot
- 0.5 bunch scallions
- 1 walnut-sized piece ginger
- 1 tbsp Sesame oil
- 150 g broccoli florets
- 750 ml vegetable broth
- 1 lemongrass stalk
- 100 g mie noodles (Chinese egg noodles)
- 150 g shrimp
- soy sauce
- 2 tbsp Lime juice
- Tabasco (optional)
- coriander (optional)

Peel and dice the carrot. Wash, trim, and slice scallions into rings. Peel ginger and cut into thin slices. Heat sesame oil in a pot. Briefly sauté carrot, scallions, ginger, and broccoli. Deglaze with vegetable broth. Rinse lemongrass stalk, roughly chop, and add to soup.

Simmer for about 10 minutes. Four minutes before the end of cooking time, add mie noodles (follow package instructions) and shrimp. Season soup with soy sauce and lime juice. Adjust with tabasco and coriander to taste.
