Ingredients
- 2 carrots
- 0.25 celery stalk
- 1 leek
- 1 pepper
- 1 green bell pepper
- 1 onion
- 1 Garlic clove
- 1 tbsp curry powder
- 2 tbsp olive oil
- 1 l vegetable broth
- 12 tbsp mung bean sprouts
- salt (pepper)
Instructions

Peel and finely chop the onion and garlic, then sauté with the curry powder and olive oil. Add the vegetable broth and bring to a boil. Peel and wash the carrots and celery. Wash, trim, and seed the bell pepper.

Wash and trim the leek. Slice all vegetables into thin julienne strips. Add everything to the boiling broth, bring back to a boil, then simmer for about 4 minutes. Remove from heat and add the mung bean sprouts. Season with salt and pepper.
